Mezcal is a distilled spirit derived from any type of agave plant. Oaxaca’s culture is heavily influenced by mezcal. More than a beverage, it’s a part of our heritage and almost like a family member. It can used for Traditional uses include rubbing it into children’s rashes, welcoming home loved ones, and bringing people together during gatherings and celebrations.
Understand how it was made
Mezcal is not easily made which is mainly crafted. All of the process starts with farming. First the baby graves are been planted and grown with care and support of water and sunlight for eight years. As the plants grow in fresh Matatlan soil, they are constantly cleaned and cared for this is what gives the mezcal singapore its earthy essence later on. Upon being ready, the agave heart is harvested and the leaves are removed to get only the pineapple which contains the most sweetness.
After that, it’s time for roasting. A pile of agave plants is carefully stacked on top of a fire with pine wood logs. A cooked agave flavor is added to the final product through this process which can take up to five days.
In the next step, juice and fiber are either mashed or milled out of the cooled agave plant. It is then fermented. To begin Mezcal’s fermentation process, pinewood barrels are used, wherein agave fiber and juice are combined with water. At this point, alcohol begins to be produced. It takes up to 8 days to complete the fermentation process.
Double distillation is the final step. Fermented agave juice is mixed with fiber to begin the process. A second distillation is done by taking the head and heart from the first distillation and distilling them again. The process separates the water from the alcohol, thus capturing the pure alcohol in the final spirit.
